Golden, crunchy, cheesy, and utterly satisfying – this toastie is the kind of comfort food that never goes out of style. Packed with creamy mayo coated chicken, smashed avo, and melty cheese, it’s finished with Grove AvoYeah! Mayo for that perfect crisp, and served with wedges and Grove AvoYeah! Aioli for dipping. The ultimate lunch (or dinner… or anytime snack).
Serves 1
For the toastie:
– 2 slices thick-cut bread (your favourite loaf works great)
– 1 cup cooked shredded chicken
– 2 tbsp Grove AvoYeah! Mayo (plus more for spreading)
– ½ avocado, smashed
– A handful of baby spinach leaves
– 1 x sprinkle grated or sliced cheese (cheddar, mozzarella, or a mix)
– ¼ cup of sundried tomatoes
To serve:
– Hot potato wedges
– Grove AvoYeah! Aioli for dipping
1. Mix the chicken:
In a bowl, combine the shredded chicken with the Grove Mayo until it is creamy and well-coated. Add more or less based on your preference; however, the mayo is where all the flavour and moisture come from.
2. Assemble the toasties:
Lay out your bread slices. On one piece, layer smashed avo, chopped spinach, the creamy chicken mix, sundried tomatoes, and cheese. Top with the remaining bread slice.
3. Get that golden crunch:
Spread a generous layer of Grove Mayo on the outside of each sandwich – this gives the bread a beautifully crisp, golden finish when toasted.
4. Toast it up:
Heat a frying pan or sandwich press over medium heat. Cook each toastie for 3–4 minutes per side, pressing down gently, until golden and the cheese has melted.
5. Serve it up:
Slice your toastie in half and stack them on a plate. Add a side of hot wedges and a generous dollop of Grove Aioli for dipping.
