One Pan Cheesy Baked Rice & Bean Casserole

Extra Virgin Avocado Oil


  • 1 tablespoon avocado oil
  • 1 small white onion, finely diced
  • 1-2 garlic cloves, minced
  • 2 cups long grain rice
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • ½ teaspoon turmeric
  • 3 cups vegetable broth or water
  • 1 can no salt added cannellini beans
  • salt and pepper, to taste
  • 1 cup grated cheese, use dairy-free cheese if vegan
  • fresh parsley, for garnishing
  • roasted pine nuts, for garnishing (optional)


Preheat oven to 180C.

Heat avocado oil in a large cast iron pan or baking dish over medium heat.Add in onions and garlic and cook for 5 minutes.

Add in rice, diced tomatoes and tomato paste. Cook for another 5 minutes.

Add in spices and broth/water. Bring to a boil and simmer for 10-15 minutes until the rice is almost ready.

Add in beans and mix to combine.

Switch the stove heat off, top with grated cheese and pop in the oven for another 10-15 minutes, until golden golden brown.

Serve warm, garnished with fresh parsley and pine nuts. Enjoy!
