Homemade Mayonnaise

Rich, creamy and decadent, homemade mayonnaise isn’t that tricky but the taste – out of this world! And all you’ll need is a jar and a good ol’ stick blender. Serve with prawns or other fresh seafood for the ultimate indulgence.

Extra Virgin Avocado Oil

Ingredients

  • 2 large egg yolks, at room temperature
  • 1 tsp lemon juice
  • 1 tsp white wine vinegar
  • 1/4 tsp sea salt
  • 1/4 tsp Dijon mustard
  • 1 cup Grove Avocado Oil

Method

  1. Place the egg yolks, lemon juice, vinegar, salt, and mustard in a jar just slightly bigger than your stick blender. Use a stick blender to whisk for 30 seconds or the mixture is combined.
  2. Blend the mixture again as you very gradually stream in the oil, until the mixture is completely emulsified and thick.
  3. Refrigerate until needed and enjoy!
